Linda Bean, granddaughter of L.L. Bean, has announced the hiring of Margaret Salt McLellan, current Maine Lobster Chef of the Year, as executive chef for her product brand "Linda Bean's Perfect Maine," in her vertically integrated shore-to-table group of companies specializing in Maine lobster.
Bean, who operates lobster buying stations at Vinalhaven Island, Port Clyde and Tenants Harbor, says, "Margaret and I will be working together to create new markets and excitement for both Maine lobster and wild Maine shrimp, which is often the winter fishing activity for Maine lobstermen."
McLellan, a native of Boothbay Harbor, trained at Le Cordon Bleu, London, and is a graduate of the Culinary Institute of America. In hiring her to advance her work with Maine lobster, Bean says she rates very highly McLellan's affection for local Maine food favorites, locally grown vegetables, and wild-caught seafoods.
"I'll be opening two seasonal Dipnet & Lobster restaurants for Linda this summer," says McLellan, and they are also preparing a retail line of frozen Maine lobster and shrimp specialties.
Bean says new markets for the output of Maine lobster fishermen are uppermost in the minds of both women. "We want to preserve lobstering opportunity for Maine fishermen in their home state. The industry has been under a lot of pressure, including from Canada, and Margaret and I share a strong desire to do creative work to promote Maine lobster and shrimp."
Last week the Maine Lobster Promotional Council, with Governor Baldacci's backing, notified McLellan she will represent the Maine in the Great American Seafood Cookoff, to be held July 18 and 19 in New Orleans.
It was in Boothbay Harbor's 1998 Windjammer Days chowder competition that McLellan won the gold medal for the recipe that will be featured this summer in Bean's outdoor wharf restaurant, the Port Clyde Dipnet & Lobster. Also, at a sister location on the roof of Ben & Jerry's in downtown Freeport, McLellan plans to introduce Port Clyde Dawn, a pasta specialty.
